Egg Replacer

The outer layer of chia seeds swells when mixed with liquids to form a gel. This can used in place of eggs to lower cholesterol and increase the nutrient content of foods and baked goods.
-To make the egg replacement, mix 1 tablespoon of chia seeds with 3 tablespoons of water and let sit for 15 minutes.
-Alternatively, in baking, you can use ΒΌ-cup applesauce for every egg the recipe calls for.

Buttermilk-for baking

If you're baking a cake and the recipe calls for buttermilk, it's likely for the acidic quality of buttermilk rather than for flavor. Take the amount of buttermilk called for and substitute your favorite (unsweetened, plain) non-dairy milk and add 1 teaspoon lemon juice. Let it sit a few minutes before adding it in.

Whipped Cream

Canned "coconut cream" or "full fat coconut milk" can be used as a heavy cream substitute, or whipped into a yummy vegan whipped cream:

1.Chill your coconut cream or coconut milk in the refrigerator overnight, being sure not to shake or tip the can to encourage separation of the cream and liquid.
2.The next day, chill a large mixing bowl 10 minutes before whipping. Remove the coconut cream or milk from the fridge without tipping or shaking and remove the lid. Scrape out the top, thickened cream and leave the liquid behind (reserve for use in smoothies).
3.Place hardened cream in your chilled mixing bowl. Beat for 30 seconds with a mixer until creamy. Then add vanilla (optional) and powdered sugar (optional 1/4 to 1/3 cup) and mix until creamy and smooth - about 1 minute. Taste and adjust sweetness as needed.
Use immediately or refrigerate - it will harden and set in the fridge the longer it's chilled.

Butter-for baking

-Coconut oil can be substituted for butter, just chill your oil and measure.
-Shortening, like regular crisco, is vegan, and can be used in place of butter or lard in recipes as well.


-Nutritional Yeast is used as a parmesan replacement
-The web is full of vegan cheese recipes using almonds, cashews, macadamia nuts, etc. as the base.
