Vegan Meatless Loaf

¼ cup walnuts
2 celery ribs stalks/ carrots/jamaca (optional)/ bell pepper
½ yellow onion, chopped
2 garlic cloves, minced
1 (oz) package firm tofu
10 oz textured soy protein granules
1 ¼ cup rolled oats
1 tbsp soy sauce
1 tsp vegan bullion
¼ tsp mustard powder
2 tbsp tomato sauce with a dash of lemon and a pinch of sugar or honey this is homemade ketchup
2 tbsp nutritional yeast
2 tbsp of chia seeds plus water to make gel

Preheat oven for 350ºF

Grind walnuts in a food processor to powder and set aside. Reconstitute soy granules in hot water or vegetable broth according to package directions. Add the chia seeds to a bowl and mix with water on the directions on package to make it into a gel consistency. Coat medium skillet with cooking oil and place over medium heat. Add chopped celery and onion and garlic and saute for 4 to 5 minutes or until tender and remove from heat. Mash drained tofu into a large bowl. Mix walnuts, vegetables, soy granules with the bullion, oats, soy sauce, nutritional yeast, mustard powder, and ketchup and salt and cayenne pepper to taste. Coat a 9" by 5" loaf pan with cooking oil and spoon mixture into the pan and press. You can make more homemade ketchup to add and spread over the top of the Meatless Loaf if you like.

Bake for 55 to 60 minutes or until inserted knife comes clean.
